Easy Spiked Eggnog Recipe

My spiked eggnog cocktail recipe is made with two liqueurs:

  1. Amaretto,ย which adds lovely almond and vanilla notes, along with a sweeter essence. I just love the smell of amaretto!ย Triviaย โ€“ The first drink I ever ordered legally in a bar was, of all things, an amaretto sour, which is not a common choice for 21-year-olds, but I have always had a soft spot for amaretto.
  2. Spiked rum,ย which adds more spice and intensity to the eggnog drink. Because I used Captain Morgan, the notes of cinnamon, nutmeg, and cloves help to add lovely warming notes to your spiked eggnog drink.
  3. Itโ€™s rich, creamy, and beautifully spiced! Perfect for sipping around the holidays.

Ingredients and Notes

You only need 3 main ingredients in this spiked Christmas eggnog recipe:

  • Amaretto liqueur โ€“ I like to useย Disaronno,ย but itโ€™s up to you. You can omit the amaretto, but the final flavor profile and taste will be that of a spicier eggnog, and less sweet
  • Spiced rum โ€“ I preferย Captain Morgan. You can also use regular light rum like Bacardi or really any type of rum, from gold rum to dark rum, depending on your preference and what you have on hand. Good substitutes for spiced rum are other types of rum, as well as bourbon, brandy, cognac, or whiskey, depending on your palate and preferences. You can also omit the rum. Becauseย amarettoย is a sweeter liqueur, youโ€™ll be left with a sweeter rather than sweet-and-spicy eggnog if you were to also include spiced rum
  • Eggnog – I keep things easy with store-bought eggnog (regular or lite). If you have a favorite homemade eggnog recipe made with either heavy cream or whole milk plus egg yolks and egg whites, you can also use it. Although it is not necessary to use homemade eggnog

Make it a mocktail!

Of course, you can omit the alcohol, but at that point, youโ€™ve just got regular โ€˜ole eggnog rather than spiked eggnog. For a non-alcoholic version, try adding vanilla extract and a splash of almond milk instead of amaretto if you want to jazz things up a bit.

How to Make Spiked Eggnog

  1. Add the amaretto and spiced rum to a rocks glass. (I sometimes also add ice, because I love very chilled drinks even in the dead of winter.)
  2. Top with eggnog and stir.
  3. Optionally, garnish with whipped cream and cinnamon, either sprinkle ground cinnamon or add decorative cinnamon sticks, or sprinkle a bit of ground nutmeg for a festive holiday cocktail before serving!

Make a large batch

Pour off some eggnog into a glass, then add the appropriate number of ounces of each alcohol to the plastic jug or carton, seal, and refrigerate. Make sure to shake very well to re-combine the mixture before serving.

Measuring Tip โ€“ If youโ€™re using a 1/2 gallon container or carton of eggnog, I would pour off 8 to 10 ounces of the eggnog, and then add 4 to 5 ounces each of amaretto and spiced rum, seal, shake, and serve.

You can also do this in a pitcher or punch bowl, cover tightly with plastic wrap, and stir very well before serving.

Storage Instructions

Leftover spiked eggnog will keep airtight in the fridge for about 2-3 days. The alcohol helps preserve it, but dairy ingredients can spoil quickly, especially if it sat out at a party for a while, and was then re-refrigerated. Make sure to do a sniff test before consuming anything that was left over.

Equipment

  • 1 (8-Ounce) Rocks Glass

Ingredients 

  • 1 ounce amaretto liqueur
  • 1 ounce spiced rum
  • 6 ounces eggnog, chilled
  • Optional: whipped cream or whipped topping, cinnamon sticks or ground cinnamon, ground nutmeg, , for garnishing

Instructions 

To Make a Single Serving:

  • To an 8 ounce rocks glass or similar glass, add one ounce each of the amaretto and the spiced rum, and stir to combine. If you like very chilled drinks, add ice as desired.
  • Top with eggnog, stir to combine, taste, and make any necessary flavor adjustments.
  • Optionally, and as desired, top with whipped topping, cinnamon, or nutmeg, if desired and to taste. Serve immediately. Leftover eggnog will keep airtight in the fridge for up to 2 days. The alcohol helps preserve it, but the dairy ingredients can spoil quickly, especially if it was sitting out at a party beforehand.

To Make a Pitcher:

  • Pour off some eggnog from the carton into a glass, then add the appropriate number of ounces of each alcohol to the plastic jug or carton, seal, and refrigerate. Make sure to shake very well to re-combine any separated ingredients before serving.
    Measuring Tip – If you're using a 1/2 gallon container or jug of eggnog, I would pour off 8 to 10 ounces of the eggnog, and then add 4 to 5 ounces each of amaretto and spiced rum, seal, shake, taste, adjust if necessary, and serve.

Make Ahead Instructions:

  • You can make a pitcher of spiked eggnog up to about 24 hours in advance if you're planning on serving it for a party and want to just get this task knocked out and done. You can also do this in a pitcher or punch bowl, cover tightly with plastic wrap, and stir very well before serving.
