I recently received this new cookbook which is being released in a few weeks.

The I Love Trader Joe’s Vegetarian Cookbook: 150 Delicious and Healthy Recipes Using Foods from the World’s Greatest Grocery Store

The book is your guide to turning healthy ingredients into inexpensive, mouth-watering, vegetarian meals for any day of the week. A few of the recipes include:

Pineapple Upside-Down Pancakes

Herbed Garlic Polenta Fries

Tuscan Tomato Soup

Tempeh Tacos

Pumpkin Spice Cobbler

There are 150 delicious vegetarian (and vegan) options from breakfast to dinner and everything in between. This cookbook has plenty of recipes and ideas to help you prepare easy and tasty vegetarian meals using ingredients from Trader Joe’s, and of course ingredients from other grocery stores may be substituted because although I love Trader Joe’s, I know not everyone has access to their stores.

I was a contributing author in this Trader Joe’s cookbook, which was just released last month, so between that cookbook and this one, I’m always cooking up something with TJ’s products. Here are a few of my favorite vegetarian or vegan recipes that can be made using Trader Joe’s ingredients:

Vegetable Lasagna Casserole (vegan, GF) – Non-traditional noodle-less lasagna that’s make with grated zucchini and carrots, which is baked to form the ‘noodle’. Trader Joe’s salsas and sauces work wonderfully to layer in the middle of this lasagna

Vegetable Lasagna Casserole on green plates

Cheesy Taco Casserole – Gluten-free, vegetarian, and can be kept vegan. Like tacos, with rice and beans, in casserole form

Cheesy Taco Casserole with chips

Double Melted Cheese and Red Pepper Dip (GF) – Make in the microwave in 5 minutes. Fast, easy, and my new favorite dip. The Trader Joe’s green chilis add just a hint of heat to the dip and are only 99 cents

Double Melted Cheese and Red Pepper Dip with slices of white bread

Spinach Artichoke and Roasted Red Pepper Cheesy Squares (vegetarian, with vegan & GF options) – Like spinach and artichoke dip, but baked into squares. Trader Joe’s frozen spinach, frozen artichokes, and marinated red peppers are the stars of the show

Spinach Artichoke and Roasted Red Pepper Cheesy Squares on patterned blue and red plate

Spicy Baked Eggs and Hash Brown Casserole (vegetarian, GF) – Eggs, frozen hash browns, and frozen spinach make this meal easy , fast, and very budget-friendly

Spicy Baked Eggs and Hash Brown Casserole

Chips and Cheese Chili Casserole (vegetarian/vegan, GF) – Tailgating dreams come true. Or make it for an easy weeknight meal that makes planned leftovers. Trader Joe’s has so many varieties of chips, any of which would be perfect baked into this dish

Chips and Cheese Chili Casserole

Mango Basil Personal-Sized Tortilla Pizzas (can be kept vegan & GF) – I love Trader Joe’s frozen mango chunks and am never without them or their frozen pineapple chunks, for smoothies to pizza

Mango Basil Personal-Sized Tortilla Pizzas

Pumpkin Spice and Peanut Butter Chocolate Chip Granola (vegan, GF) – Trader Joe’s pumpkin pie spice, pumpkin puree and dried cranberries are perfect for this fall-inspired granola. Year round I am never without their raisin medley with golden raisins or their semi-sweet chocolate chips

  1. When living in the Mid west I never had the chance to go to the Trader Joe’s store in Chicago, so I kept on driving from Ia. to N.Y. to move and visit my first store. It is such a fun and funky store and I love there Fearless Flyers I get in the mail. I purchase about 3 things from each issue to try there new products and love them all. I love anything made with chocolate. I love there 100% filtered juices and there organic fruits and vegetables. Knowing these are healthy food helps me enjoy my meals more and more. Whenever I need a mini vacation I head to Trader Joe’s in Danbury, Ct. The staff members are so helpful and always ready your questions.

Oh, and the dark chocolate covered edamame, which I sampled before realizing it wasn’t vegan. ::sad panda::

As for an all-time favorite vegan cookbook, that’d have to be Veganomicon by Isa Chandra Moskowitz. If you already own it, you know why. If you don’t, get it now!

Trader Joe’s Sunflower butter appears on my shopping list a lot….love that stuff:D

  10. My all-time favorite cookbook is 30 Minute Vegan (the original one). I love it becausef they really are quick recipes and use ingredients that I already have on hand. And everything I have made has turned out incredibly tasty. The basic nut cheese and a their ranch dressing are two of my faves. Always love trying new cookbooks so would be excited to try this one. Thanks Avery!!

  14. Unfortunately we don’t have a Trader Joe’s in Oklahoma….hopefully one day! But I have had some two-buck chuck.

  27. Ohhhhh… I love Trader Joe’s. If I had to pick my favorite product it would be one of their nut butters for sure. Favorite cookbook? Considering I’m blog addicted for almost all of my cooking these days, my favoite is a hand me down cookbook from my mom. It’s the red Betty Crocker cookie cookbook. Well stained, and the copyright is like 1963, but to me – it’s priceless! Full of wonderful memories cooking with my mom.

  28. Love all the features! My favorite cookbook, though I’ve altered recipes to make them vegetarian/vegan depending the year, is the Joy of Cooking originally by Irma Rombauer.
    Thanks :)

  29. even though I’ve only been to TJs once (and it almost broke my bank, because I bought SO MUCH…everything just looks AMAZING and is priced AWESOME, so I want ALL THE THINGS!!!), one of my favorite products has been the Orange Champagne Vinegar. I use it to make all sorts of salad dressings and marinades, or just on its own. it’s great!

  30. my favorite cookbook is totally cheesey. it’s the Cooking With FRIENDS cookbook, created at the height of the FRIENDS tv series Merchandising.. And even though it is an effort to get you to buy FRIENDS Merchandise, I have found it to be one of the best cookbooks I have. I keep coming back to the recipes there – chocolate waffles; potato gruyere casserole, pesto pizza, Phoebe’s Oatmeal cookies (which really are that good), great potato pancakes, and probably the best meatloaf recipe i have ever used. (everyone asks for the recipe..) – it’s out of print, but you can get it on through their used booksellers…

i also subscribe to your emails and follow you on pinterest and facebook.

  49. I don’t have a Trader Joe’s very near to me so I don’t go all that often, but this cookbook looks amazingggg!!!
I am a big fan of their selection of trailmix and dried fruit though.

  50. Where do I even begin with my T Joe’s product love?! Let’s see… coconut oil, roasted red peppers, capers, and red quinoa are all staples in my apartment, and I love their cheeses!

  51. My favorite cook book is actually the Betty Crocker cook book because it was my first, given to me on the day I had my first child and it taught me so much! :)

  52. The list goes on and on…especially now that it is pumpkin season! I think that their cookie butter is unbelievably good and I keep many of their frozen foods in my freezer! I just tried the meatball…delish…maybe I will make them for dinner tonight : ) I can’t wait to see the cookbooks!

  53. I love TJ’s! I love their Trek mixes, their seasonal items (pumpkin coffee), their dark chocolate salted caramel chocolate bar, and of course, cookie butter!
