Vegan Banana Nut Muffins (Gluten/Soy-Free)

Scott bought a mere eight very large and very ripe bananas that all need to get used up, like before they even left the grocery store.

But since they’re ours now, I needed to whip up something using them.  So here’s a quick, easy, vegan muffin recipe for you!

 Blend first two ingredients, the cashews & flax seeds.

Then add everything else and blend it together with whatever appliance floats your muffy-makin’ boat.  Mine was the VitaMuffyMaker.

Batter Up

Pour into Muffin Tins

Bake at 350F for 18-24 minutes (mine were gooey at 18 mins and I took out at 20 mins for that smidge underbaked goodness I go for)

Voila, 8 little Vegan Banana Nut Muffins

Enjoy!  Great for lunches, kid snacks, breakfast with a slather of nut butter on top, you name it, suuuuper easy and as always vegan, gluten & soy-free with no additional oil added.

Vegan Banana Nut Muffins (Gluten-Free, Soy-Free)

Recipe Yields 8 Small to Medium Muffins
1/4 c raw cashews (didn’t soak them)
1/4 c flax seeds
1 Large Banana
1/3 c almond meal (or 1/3 c whole almonds that you grind)
1/3 c brown sugar
2 Tbsp Agave
1 Tsp Cinnamon
Optional: 1-2 Medjool Dates (I used one date)
Optional: Add 2 Tbsp Cocoa or Carob Powder
Optional: Add 1/4 c shredded coconut

Optional: Add 1/4 dried fruit like raisins, cranberries, blueberries, gogi berries, etc.

  1. I would love to make vegan puppy chow, but I would prefer to not make it with Earth Balance.

    Can you think of something else that could replace it?

    Apple sauce wouldn't work right?

  2. I had sweet potato fries for the first time from a local deli here and it was a different taste for sure! I like sweet potatoes but don't think I care for them fried too much… I'd like to try the broccoli salad!

  3. yum! my girlfriend makes the vegans chex mix all the time~it is ADDICTING.. i have to stay far from it :)

    your desserts always impress me but when you whip up the savory dishes i am astonished at your creativity. i mean seriously.. you are so good at making up salad dressings! i would never put apple cider vinegar, sugar and mayo on broccoli but i bet it is a bangin savory combo! i am more into savory than sweet so i love when i see stuff like this! plus they are recipes i can use for me and not for the friends.. if i used all your sweet recipes for me i would be roughly the size of a hippopotamus ;)

    loving the SP fries and did you know yesterday was national potato day?! yes yes yes!

    fave kitchen appliance.. hum that is hard. probably my espresso machine though, honestly.. i love some strong coffee!

  4. Yum, yum, yum! I agree about the stinkiness of broccoli, not much to be done though. It even smells that way Raw! Those dough balls look delish! I am officially in cacao withdrawals so this didn't help! : )

    My favorite appliance is my vitamix as well. Can't live without it! By the way, have you seen the new Ninja blender. It's like the magic bullet on steroids. My sister just got one and loves it. Just thought I'd pass it by you: )

  5. Oh my goodness, I used to eat non-vegan chocolate pb chex mix by the POUND in high school! I haven't had it since then, so I definitely need to make this!! Have you considered starting your own cookbook? I'm being completely serious here. You need to! :) I can help edit, if need be.
