  1. I need these books because a stuffed pepper or pasta dish is about as fancy as I get when doing veggie.

  2. Even though I make wonderful, interesting, complex dishes for a living (or maybe because I do,) my favorite things to eat are the simplest. I love a great big salad with local mesclun greens or spinach, protein-rich hemp seeds, some orange segments, maybe some grapes or other fruit, some carrots or whatever shaved in, and maybe some lemon juice squeezed over it. I can’t live without my green smoothies – this morning I enjoyed banana, kale, spinach, cilantro, and chia. And one of my favorite foods of all time is carrot ginger pate rolled up in nori – sometimes with cilantro, sometimes dill, sometimes whatever fresh herbs need to get used up!     I use way less nuts in a recipe, though, so I can eat more of it at once without getting too full!

  3. Great giveaway! I’ve wanted to try these sweet cookbooks for some time now. I just had a really divine seitan marsala that I’d love to learn how to make!

  4. My favorite dish is a chickpea coconut curry. It is very simple: I cook an entire bag of chickpeas in my slow cooker while I’m at work. Then, when I get home, I put them in a pot with 2 cans of coconut milk, about four to five cups of diced potatoes, two to three chopped tomatoes, and a big bag of frozen spinach. Then I add curry powder to taste and serve over rice or with homemade naan. :)
