I recently received these two Ani Phyo Cookbooks:
Her latest book, Ani’s 15 Day Fat Blast
And her classic Ani’s Raw Food Essentials, which is now available in paperback
I have always been drawn to Ani’s approach to cooking and her cookbooks. Her little pink book of 85 Raw Food Desserts is one of my favorite raw dessert-making books because Ani does not like to hassle with overly complicated or long and drawn-out recipes. As far as raw foodies go, I find she has some of the simplest and most straight-forward recipes.
For the most part, her ingredients are easy to find and source and a shopping trip won’t break the bank.
She makes things that don’t take days and days to dehydrate and I usually cannot plan days in advance and her recipes are sensitive to that.
Some of my favorite raw or no-bake, vegan, and gluten-free recipes include:

I make a version with less nuts and more veggies, so I can eat way more of it in one sitting and still feel good about the calories! I add plenty of celery, lots of cilantro, and I use fewer nuts at a time. Sometimes I’ll use freshly dried apple or other local fruit instead of the raisins!

I have never tried raw food but would love to!
my fave raw recipe is a zuc pasta with a jicama alfrado sauce. its not as heavy as a full nut base, loaded with veggies and i can eat 475649 pounds of it without any remorse.
My absolute favorite raw food treat is kale chips. I could live off of these! And I would love to win these books!

I make little energy orbs with almonds, dates, and coconuts in the food processor. I’ve seen many variations of these online. I roll them into balls, but my daughter likes to smoosh them into cookies or bars. We also like a good kale salad with shredded kale, avocado and lemon juice. YUM! Thanks for htis great giveaway!
I would love to learn… well everything!! the cookie dough bites… the brownies (because who doesn’t love brownies?!) the pasta… I’m incredibly curious about it all, and I think these could be a great place to start!

Adapting pesto to be raw is quite easy. Just take your favorite pesto recipe (uncooked, dairy-free), and top some zucchini noodles mixed with kelp noodles for oodles of deliciousness. Top with a sprinkle of hemp seeds for a nice crunch factor!
