The Easiest Chicken Noodle Soup Recipe

Chicken noodle soup is one of the fondest memories I have of my grandmother’s cooking.

Classic, comforting, a cure-all for whatever ailed me, and I could taste my grandma’s love in it.

However, my grandma’s version took hours and hours. I don’t have time to watch a boiling pot for half the day and this version is easy, ready in 30-minutes, and has all the comforting qualities you want in classic chicken noodle soup.

My family loved the homey, classic flavors in the soup, raved about it, and asked when I’m making it again. It makes enough to stash half in the freezer for a rainy day or for winter cold and flu season. Chicken noodle soup is a miracle worker.

Chicken Noodle Soup Ingredients 

To make this easy chicken noodle soup recipe, you’ll need the following basic ingredients: 

  • Olive oil
  • Carrots 
  • Celery 
  • Sweet Vidalia onion
  • Garlic
  • Chicken broth 
  • Bay leaves
  • Fresh thyme
  • Dried oregano
  • Wide egg noodles
  • Shredded cooked chicken
  • Fresh parsley 

What Are the Best Noodles for Chicken Noodle Soup? 

Egg noodles in chicken noodle soup is the only way to go for me because that’s how my grandma made it, but if you like rotini or another type of pasta, use it instead.

How to Make Chicken Noodle Soup

Making homemade chicken noodle soup with egg noodles doesn’t get easier than this! Here’s an overview of how this simple recipe comes together: 

  1. To a large Dutch oven or stockpot, add the oil and heat over medium-high heat to warm.
  2. Add the carrots, celery, onion, and sauté until the vegetables begin to soften. 
  3. Add the garlic and sauté for another 1 to 2 minutes.
  4. Add the chicken broth, bay leaves, thyme, oregano, pepper, and bring to a boil. Allow mixture to boil gently for about 5 minutes or until vegetables are fork-tender. 
  5. Add the egg noodles and boil the mixture until the noodles are cooked through. 
  6. Add the chicken, parsley, optional lemon juice and boil until chicken is warmed through.
  7. Remove the bay leaves and serve immediately!

Tips for the Best Chicken Noodle Soup

To save time, make this chicken noodle soup with rotisserie chicken or leftover chicken that you have on hand. Of course you can roast or pan sauté chicken if you’re so inclined.

There are quite a few herbs used including thyme, oregano, bay leaves, and parsley. If you don’t have them all on hand, don’t want to buy a bunch of thyme for just 1 teaspoon, or aren’t fond of a particular herb, you can probably omit it. Your soup won’t taste exactly like mine, but it’ll be close.

Make sure to salt your soup to taste. I use low-sodium chicken broth and add a bit of salt to my soup so I can control the overall salt level. The saltiness of low-sodium broth varies among brands, and if you used a rotisserie chicken, salt levels vary. And everyone’s personal preference for salt varies so salt to taste.

  • 2 tablespoons olive oil
  • 1 cup carrots, peeled and sliced thin (about 1 1/2 large carrots)
  • 1 cup celery, sliced thin (about 2 stalks)
  • 1 cup sweet Vidalia or yellow onion, peeled and diced small (about 1 medium onion)
  • 2 garlic cloves, minced
  • 64 ounces (8 cups) low-sodium chicken broth, plus more if desired
  • 2 bay leaves
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon pepper, or to taste
  • 12 ounces wide egg noodles (or your favorite noodles or pasta)
  • 2 cups shredded cooked chicken (use storebought rotisserie chicken to save time; or roast or cook your own chicken in a skillet)
  • 3 to 4 tablespoons fresh flat-leaf parsley leaves, finely chopped
  • 1 tablespoon lemon juice, optional
  • salt, to taste


    1. To a large Dutch oven or stockpot, add the oil and heat over medium-high heat to warm.
    2. Add the carrots, celery, onion, and sauté for about 7 minutes, or until vegetables begin to soften. Stir intermittently.
      Add the garlic and sauté for another 1 to 2 minutes.
    3. Add the chicken broth, bay leaves, thyme, oregano, pepper, and bring to a boil. Allow mixture to boil gently for about 5 minutes or until vegetables are fork-tender. Note – If you like brothier soup, add additional broth, possibly as much as an additional 64 ounces because as time passes the noodles will continue to absorb broth.
    4. Add the egg noodles and boil mixture for about 10 minutes, or until noodles are soft and cooked through. At any time while making the soup, if the overall liquid level is lower than you like and you prefer more broth, adding a cup or two of water is okay. At the end you will adjust the salt level.
    5. Add the chicken, parsley, optional lemon juice (brightens up the flavor), and boil 1 to 2 minutes, or until chicken is warmed through. Taste soup and add salt to taste. I added about 1 tablespoon but this will vary based on how salty the brand of chicken broth used is, how salty the rotisserie chicken is, and personal preference. Make any necessary seasoning adjustments (i.e. more salt, pepper, herbs, etc.), remove the bay leaves, and serve immediately.


Soup will keep airtight in the fridge for 5 to 7 days or in the freezer for up to 6 months.

Made this last week and it was awesome!  Served to company, with cooked bowls of rice and orzo, to add as desired.  Used a Costco rotissiere chicken, which right now, is cheaper than anything else!!  Will definitely make again, as it was the easiest and best chicken soup, I’ve ever made!Thank you for the recipe and Happy 2023!!

  8. This is my go-to “miracle” soup when anyone is sick. The only thing I added was a bit of ginger (very restorative) and a sprinkle of turmeric while cooking because it brightens the color of the soup, particularly when using stock instead of broth. Fabulous recipe.

  13. This is a great quick and yummy soup! My only issue was it was too much pasta and it soaked up all the broth. I ended up having to add almost 4 cartons! Next time ill cut it in half and cook it separately til its almost done then add it in.

      Yes, noodles especially egg noodles, can soak up a lot of broth. One tip like you mentioned to combat that is to boil the noodles separately, or halve the amount, or add extra broth, too.

  17. I used a bag of frozen mirepoix, which cut down on prep time.

    I expected the soup to be less flavorful because I used 4 cups of water with my last 4 cups of frozen broth from a very popular online roasted butter chicken recipe. But it was amazing! I think the butter from the broth added flavorful fats to the soup. Highly recommend.

  19. I think this soup is excellent, loved it! I really enjoyed the seasoning but only used half the pepper and found that to be enough. I also only used 8 oz. of noodles. I had a couple containers of frozen bone broth that I had made from a couple of rotisserie chickens so I used those, also enough left over chicken. I added 4 cups of water and some Better Than Bullion to taste, it was wonderful. Had to use dry parsley since mine recently died and forgot to add the lemon. Can’t wait to taste it with fresh parsley and lemon but it was still amazing. Thank you for such a flavorful chicken noodle soup!

  22. I’ve been making chicken soup from rotisserie chicken for years – using the carcass to make the stock, the meat for soup, chicken salad, and stuffed crescents. I get a lot out of each chicken! I was looking for a faster soup and came across this recipe. I made one change…I added two teaspoons of Better than Boullion (chicken) and two cups of water. Oh my! It’s easy, fast, and better than my made from scratch.

  23. Made this recipe and LOVED it. Served at a company pot luck and there was nothing left. **I cut the amount of egg noodles down. 12 oz is too much pasta for 64 oz of broth. I used 1/2 of the bag of egg noodles and it was the perfect amount of noodles/broth. You may have to add water if the pasta begins to absorb all of your broth.

  26. Soooo yummy and tastes like it has been cooked for hours because of all of the flavor. I personally prefer smaller noodles, like ditalini, for myself and my kids! We find the bigger noodles overtake the soup

    2. I absolutely love this recipe. I do find it heavy on the noodles so I do extra veggies. Make sure you wait until the end to add the salt a little at a time so you don’t over do it. I love the lemon flavor so I add alot more than it calls for.

  30. I have some cartons of vegetable broth to use up – can I sub. those for the chicken broth? Maybe add in some extra broth made with Tone chicken paste & water for some chicken flavor? And is there a way to cook some boneless skinless chicken breasts in water to cook them? Thanks!!

    1. Yes you can do all those subs. Just Google how to poach chicken and do that. Or poach them in the broth before adding the noodles.

I’ve made this wonderful recipe a number of times now.  The cool, rainy NH weather this summer called out for this soup.  Although I stay true to the ingredients and instructions, since I had the time I boiled the rotisserie chicken bones in the chicken stock for about an hour before finishing.  Over the top good.  Thank you, Averie, for another go to recipe.

I have made this recipe multiple times, my family includes me (doing weight watchers) my seriously ill husband who has an impaired appetite who hates chicken noodle soup and a notoriously picky 5 year old who loathes vegetables when they are cooked.Not once has the pot made it through to becoming leftovers. I’ve messed with the recipe loads due to not having this thing or that thing at the time and it still turns out heavenly. I have used chicken breast and added a spoonful of butter to provide the fats that the dark meat usually would. I’ve used powdered garlic. I’ve missed out the celery or the carrots so many times and used just about every variation of pasta you can think of. It is so forgiving. Thank you.

  35. This is my go to chicken noodle soup recipe and I’ve made it at least 20 times now. I love how easy it is to pull together. I make a few changes to the recipe:-I double it so I can use a whole rotisserie chicken-I use a stick of butter instead of olive oil -I use 5 qts of broth and throw one veggie in- I use 4 bouillon cubes instead of adding saltI’m obviously not a health nut, but darn is this soup good!

My husband has to eat low sodium so I cook chicken breasts without adding salt, shred the chicken and store in quart bags in the freezer.  I used that in the soup and followed the recipe, omitting the salt (I did use low sodium stock I keep on hand) and my husband loved it.  It was very tasty even without the salt.  I did add a little more onion than the recipe called for so he wouldn’t miss the salt.  It was delicious.

  38. My family REALLY enjoyed this soup on the first snowy day in Montana (early September)! CATION…Once you add the noodles ,simmer for 10 minutes and add the chicken & parsley, SERVE ASAP!!! I made the mistake of adding the noodles and simmering for about 30 minutes (or so).The noodles DO absorb ALL the broth!!;~0…Serve with fresh, warm French bread & butter…YUM!!

  48. My husband said this should be canned and sold it was so good! It did turn out amazing! I changed a couple things including: I used 16oz of orzo, doubled the broth (might even add another 32oz to make it more soupy next time as it was thick and hearty with double the broth, used a whole rotisserie chicken shredded up into little bits, and used fine ground white pepper instead of black to give it a more mellow flavor. Perfecto! <3

  49. The recipe was very easy to make, and overall it was good. I think the recipe calls for too much pepper. I know it specified “to taste”. But the suggestion was 1tsp. I thought the pepper overpowered the soup. I’ll try again with 1/2 the pepper and see how that goes.

    1. Yes “to taste” means to your taste which is why I wrote that since salt and pepper are very personal. In any recipe, always start with a pinch, especially if you think you’re sensitive to that particular flavor, spice, etc. and work up.

      1. Had to give a follow up – overnight the orzo expanded to like 100 times (slight exaggeration) its original size so this became more of a pasta dish in the end haha. Going to try it again but with like 1/3 of the orzo :)

  53. I loved it. I boiled a chicken a few days ago and I had homemade broth (always better than from the store) and my shredded chicken I had in the freezer. I had thyme and parsley from the garden, and prefer marjoram to oregano so that’s the only substitution I made. You’re right about the lemon. I had a fresh one on hand! It really was excellent. Filling and satifying but not real heavy. I’m glad I tried it.

I have never made chicken noodle soup before, but I wanted to make something warm and comforting for a friend who is a front-line worker and who became sick with Covid 19 while helping others. i found this recipe online. it was quick and easy to make and made quite a bit. I did end up adding another 32 oz of broth, but made the recipe as is otherwise. My family enjoyed it with some homemade drop biscuits. I hope it brings some comfort to my friend too.

  65. A good chicken soup has eluded me years, but no more…this is the keeper. Suggest doubling the recipe if you have 4 or more people, recipe as-is makes about 9 servings. I reduced the black pepper measurement to 3/4 tsp and this was still a bit much even for the avid black pepper fans of the household. Recommend reducing black pepper further to 1/2 tsp and then add more if needed at the end. The egg noodles makes the soup heartier and holds the herbs better. For the gluten free crowd, break up GF spaghetti (or add rice) as a substitute. I used 4 skinless chicken thighs, cooked them in the soup pot while I was chopping up the celery, onion, garlic, parsley and de-stemming the thyme.

  66. Great recipe! Loved the flavor! As experience tells me, I cooked the noodles separately in broth. I did not drain. The noodles soaked it all up. If I would have added them to the soup, there wouldn’t be any broth left. I used bone broth. It was very good and easy, but also took longer than 30 minutes with washing and chopping.

      Regarding the noodles soaking up broth, yes, that’s why I do mention that at any time should you need to add more broth, do it. Some noodles aren’t as spongey and don’t soak up as much as others. I find it varies from brand to brand but glad you followed your intuition.

      I have heard people storing it with the noodles separate from the rest but I have never done that. They do absorb broth as time passes but I think that’s more in the fridge than the freezer. I wouldnt worry too much about it if yours are already all together.

      I freeze things like this in individual-sized Gladware containers because otherwise it’s a pain when thawing. Or maybe if you have a “family sized” plastic container, that’s fine too, but I wouldn’t just freeze it in one huge container because later on it’s a royal pain. Don’t fill any containers too full. The liquid expands slightly in the freezer.

  76. This was very good! Didn’t have fresh thyme or a bay leaf, but did have the other spices. Made it more brothy by using some water and boullion. Used a rotisserie chicken and got it right when they put it out at 4:00pm so it hadn’t spent hours drying out and was very moist. Nothing can ruin chicken soup more than dried out chicken. I also took the additional step of cooking the noodles separately and adding them to the individual bowls, and then storing them separately too so they don’t get soggy from absorbing all the broth. Yummy!

  125. My husband wasn’t feeling well so I decided to fix him some Chicken Noodle Soup, even though it’s not one of my favorite soups — just not a big fan . . . until now. Following your recipe, I made him your soup and it was DELISH! We had it for dinner that night, both eating several bowls! We enjoyed it so much, we finished it off for lunch the next day. I pretty much followed the recipe using a rotisserie chicken, 1/4 tsp. garlic powder (instead of cloves), increased the veggies by 1/2 a cup, and was a little heavy handed with the herbs. Because we like more broth, I used an additional 14 oz. can of chicken broth and cut back on the noodles. I also added some celery salt and a couple of Tbs. of “Better Than Broth/Roasted Chicken Base”. Avery, I LOVED the soup but really, really appreciated how fast and easy the recipe was and will definitely be checking out some of your others. :)

  130. My husband wasn’t feeling well so I found this quick recipe. He thought it was great! It took a bit longer than 30 min, but still fairly quick. Overall a really good and simple recipe, leaving room to make adjustments to taste. The changes I made were minimal: Used 4 garlic cloves. I found the 64 oz of broth didn’t even cover the uncooked noodles so I had to add another can of broth plus a can of water. I added a bit more of the herbs rather than salt since my husband is on a low sodium diet. The only other thing I’d do differently next time is use less noodles and/or add more of the veggies.Thanks for sharing this recipe! :)

  131. My son just had his wisdom teeth removed and I needed to make him something nutritious and soft to eat. I followed the recipe but made a few minor adjustments. I used leftover dark turkey meat instead of chicken, cooked soup longer to get the veggies really soft, cooked noodles separately so they wouldn’t get too mushy since I wanted to cook the soup longer, and did not add the optional lemon juice.   146. Full disclosure: I mostly used your recipe but cobbled it together with another one that uses tortellini instead of egg noodles. AND I completely forgot to put the parsley in, even though it was staring me in the face. Nonetheless – it turned out fantastic!! The flavor is amazing, even without the parsley. I did add extra broth, and when I ran out I of that, added a couple of cups of water and tossed in a couple of chicken broth cubes so the flavors didn’t dilute.     1. Not really…water or some other kind of broth but really I recommend the chicken broth for chicken soup.

  153. What brand of chicken broth do you use? I find that the broth makes all the difference, and I have not found one that I like as well as Sweet Sue in the grocery stores (which they no longer carry), so I have been using boullion.

    1. I agree, they do all taste slightly differently, I tend to use Trader Joe’s a reduced sodium or some of my local store brands that are organic reduced sodium.

  156. I made this a few nights ago and it was very well received. I did not change any of the ingredients but did make one change in technique. I had a very large chicken breast with skin and bone. I put it in the pot when adding the broth and let it simmer all that time. Took it out a couple of hours later, let it cool, shredded it and returned it to the pot after the noodles went in. Worked out great and one less step / pan. (I know this says 30 minute soup, but I had all afternoon) This soup is hearty enough that we made a meal of it along with a piece of corn bread.     1. It’s a weight measurement. You want to see how many ounces are on the package and add accordingly. If you added 12 ounces from a 12 ounce package that is correct.

I do cook the noodles in another pot for a few minutes then add to the soup… keeps them from soaking up too much of that delicious broth. Also, I simmer a few of those rotisserie bones with the veggies for more flavor, then remove them with the bay leaf. I like a bit of dill instead of parsley… yummy.

I didn’t have egg noodles so I used little over one half cup tiny macaroni called Acini Di Pepe. They’re so small they cook quickly. Amazing what a wee bit of lemon juice adds to flavor.

      1. I freeze all my soups in freezer weight ziplocks. Use a straw to suck out the air. Place on cookie sheet so lies and freezes flat. I fold the zipper part up against edge of cookie sheet, just because. Saves tons of space when you can stack bag upon bag once frozen.

    1. Freeze it in a plastic container or a glass container, I recommend freezing it in smaller amounts rather than the whole batch at once, no you do not need to add more broth and simply defrosted by putting it on your counter and waiting for it to get up to room temperature.

I’m making it as I type this :) I think the lemon and parsley are SO crucial in this recipe. It really gives it the best little hint of flavor. *I do have to note though, it takes SO much longer than 5 minutes to prep…closer to 30+ minutes after you chop/peel/clean all of the veggies and pull apart a whole chicken* Still love the recipe though!   202. This was Fabulous!! My little girl came home from school with a sore throat, laryngitis and an ear ache. She asked me to make chicken noddle soup. I had just boiled boneless chicken breast earlier for chicken salad and had plenty of broth and chicken. I had the rest of the ingredients on hand. Voila!!! The soup was ready in no time and I served it with homemade sour dough bread. She’s feeling much better now!!PS: I added some fresh grated ginger and some tumeric and sauteed with the onion, garlic, etc… to this soup in hopes that it might help her symptoms.     2. I made the recipe tonight with gluten free noodles and was really disappointed. The base of the soup was fantastic, but I found the noodles became too gummy. Gluten free noodles don’t hold well in all settings, and this is definitely not a favorable setting. Egg noodle consistency can’t be beat!

      1. Since I have never tried to make this with GF noodles, I cannot say from experience what the results would be. I just want to make sure everyone reading this realizes that the soup base is fantastic but that you used GF noodles rather than egg noodles and that’s where the problem came in. I agree – egg noodle for chicken noodle soup are the best!

      2. I make it with Earthly Choice Quinoa Pasta Blend Gluten Free Fusilli noodles and it turns out great, even the non-gluten free friends love it. You do have to add more broth to the leftovers if it sits in the ridge overnight as they will soak up a lot of broth.

  217. Hi there, your chicken noodle is good but missing one star anise ….just put it in with the broth, then throw it away before you serve it…

    1. I’ve never put star anise in broth but I can see where it could add an interesting note to some broths.

  218. My family loved this especially my 2 year old. I did end up adding an extra 2 cups of water and about 1 tbs salt to this to stretch the broth since I used extra wide noodles. This will definitely be my go to chicken noodle soup from now on! Thank you!

  220. This soup is so delicious!!  I just made it today for a sick friend and kept some for my family.  I roasted a whole chicken earlier in the day and then found your recipe.  I am happy I did.  It is easy to make but tastes like I spent hours in the kitchen.  Thank you for sharing.

  222. THANK YOU so much for sharing this recipe! I was trying to replicate the Rotisserie Chicken Noodle Soup from Costco (sold in the Deli/prepared foods section). This nailed it (if not a little bit better)! I was having a “gluten-free” friend among us … no problem! Before adding the noodles, I simply transferred some of the stock/vegetables to a smaller sauce pan and added uncooked long-grain white rice (about 1/3 cup) and added some of the chicken when the rice was cooked. Voila! Chicken & Rice Soup! EVERYONE was pleased and no one felt left out!

    2. You can use gluten-free noodles as well if you prefer, although the taste and texture are a bit different. I have 2 sons who can’t eat gluten at all.

  224. Love love love!!! The BEST chicken noodle soup, so full of flavor and SO EASY!!! Thanks for this great recipe! I really believe the rotisserie chicken and the egg noodles (I used big fat long amish ones-mmmmm) make all the difference.. This is my second time making it, the only chicken noodle recipe I`ve used, and I`ll use this one forever! I added an extra cup of broth and before I refrigerate the leftovers I`ll add 2 cups of water and a pinch or so of salt. My noodles came in a 16oz bag but I prefer lots of substance in my noodle soup so I was not complaining! I used the whole rotisserie chicken also. This is even better next day which is hard to believe. Again, GREAT soup, perfect for cold nights, thank you!
