The Easiest Chicken Noodle Soup Recipe

Chicken noodle soup is one of the fondest memories I have of my grandmother’s cooking. Classic, comforting, a cure-all for whatever ailed me, and I could taste my grandma’s love in it.

However, my grandma’s version took hours and hours. I don’t have time to watch a boiling pot for half the day and this version is easy, ready in 30-minutes, and has all the comforting qualities you want in classic chicken noodle soup.

My family loved the homey, classic flavors in the soup, raved about it, and asked when I’m making it again. It makes enough to stash half in the freezer for a rainy day or for winter cold and flu season. Chicken noodle soup is a miracle worker.

Chicken Noodle Soup Ingredients 

To make this easy chicken noodle soup recipe, you’ll need the following basic ingredients: 

  • Olive oil
  • Carrots 
  • Celery 
  • Sweet Vidalia onion
  • Garlic
  • Chicken broth 
  • Bay leaves
  • Fresh thyme
  • Dried oregano
  • Wide egg noodles
  • Shredded cooked chicken
  • Fresh parsley

How to Make Chicken Noodle Soup

Making homemade chicken noodle soup with egg noodles doesn’t get easier than this! Here’s an overview of how this simple recipe comes together: 

  1. To a large Dutch oven or stockpot, add the oil and heat over medium-high heat to warm.
  2. Add the carrots, celery, onion, and sauté until the vegetables begin to soften. 
  3. Add the garlic and sauté for another 1 to 2 minutes.
  4. Add the chicken broth, bay leaves, thyme, oregano, pepper, and bring to a boil. Allow mixture to boil gently for about 5 minutes or until vegetables are fork-tender. 
  5. Add the egg noodles and boil the mixture until the noodles are cooked through. 
  6. Add the chicken, parsley, optional lemon juice and boil until chicken is warmed through.
  7. Remove the bay leaves and serve immediately!

What Are the Best Noodles for Chicken Noodle Soup? 

Egg noodles in chicken noodle soup is the only way to go for me because that’s how my grandma made it, but if you like rotini or another type of pasta, use it instead.

What’s the best chicken for chicken noodle soup?

I always use pre-cooked, shredded chicken in my homemade chicken noodle soup. You have a few options when it comes to pre-cooked chicken:

1. You can buy a rotisserie chicken at the store, shred it up, then throw it in the soup (some stores even sell pre-shredded rotisserie chicken which is a huge time saver!).

2. You can meal prep your own stovetop or baked chicken breasts. Either shred or cube the chicken whenever you’re ready to make the soup.

3. Make a batch of poached chicken a day or two in advance to use in the soup.

What Herbs are used in chicken noodle soup?

I prefer using a blend of fresh and dried herbs in my soup for a more nuanced flavor. For this recipe, I used bay leaves, fresh thyme, and dried oregano. However, you can easily adapt the recipe using whatever herbs you have on hand!

Why do you add lemon juice to chicken noodle soup?

The squeeze of lemon juice does NOT make the soup taste even remotely lemony. Instead, it brightens up the rich flavors of the soup and makes the recipe “pop” overall. If you don’t have a fresh lemon on hand, use apple cider vinegar to achieve the same result.

What sides go with chicken noodle soup?

We love serving this easy homemade soup with bread rolls (try Parker House Rolls or No-Knead Dinner Rolls), Skillet Cornbread, or a Classic House Salad.

Tips for the Best Chicken Noodle Soup

Chicken: To save time, make this chicken noodle soup with rotisserie chicken or leftover chicken that you have on hand. Of course you can roast or pan sauté chicken if you’re so inclined.

Herbs: There are quite a few herbs used including thyme, oregano, bay leaves, and parsley. If you don’t have them all on hand, don’t want to buy a bunch of thyme for just 1 teaspoon, or aren’t fond of a particular herb, you can probably omit it. Your soup won’t taste exactly like mine, but it’ll be close.

Salt: Make sure to salt your soup to taste. I use low-sodium chicken broth and add a bit of salt to my soup so I can control the overall salt level. The saltiness of low-sodium broth varies among brands, and if you used a rotisserie chicken, salt levels vary. And everyone’s personal preference for salt varies so salt to taste.

Ingredients  

  • 2 tablespoons olive oil
  • 1 cup carrots, peeled and sliced thin (about 1 1/2 large carrots)
  • 1 cup celery, sliced thin (about 2 stalks)
  • 1 cup sweet Vidalia or yellow onion, peeled and diced small (about 1 medium onion)
  • 2 garlic cloves, minced
  • 64 ounces 8 cups low-sodium chicken broth, plus more if desired
  • 2 bay leaves
  • 1 teaspoon fresh thyme, or 1/2 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 1 teaspoon pepper, or to taste
  • 12 ounces wide egg noodles, or your favorite noodles or pasta
  • 2 cups shredded cooked chicken, use storebought rotisserie chicken to save time; or roast or cook your own chicken in a skillet
  • 3 to 4 tablespoons fresh flat-leaf parsley leaves, finely chopped
  • 1 tablespoon lemon juice, optional
  • salt, to taste

Instructions 

  • To a large Dutch oven or stockpot, add the oil and heat over medium-high heat to warm.
  • Add the carrots, celery, onion, and sauté for about 7 minutes, or until vegetables begin to soften. Stir intermittently.
    Add the garlic and sauté for another 1 to 2 minutes.
  • Add the chicken broth, bay leaves, thyme, oregano, pepper, and bring to a boil. Allow mixture to boil gently for about 5 minutes or until vegetables are fork-tender. Note – If you like brothier soup, add additional broth, possibly as much as an additional 64 ounces because as time passes the noodles will continue to absorb broth.
  • Add the egg noodles and boil mixture for about 10 minutes, or until noodles are soft and cooked through. At any time while making the soup, if the overall liquid level is lower than you like and you prefer more broth, adding a cup or two of water is okay. At the end you will adjust the salt level.
  • Add the chicken, parsley, optional lemon juice (brightens up the flavor), and boil 1 to 2 minutes, or until chicken is warmed through. Taste soup and add salt to taste. I added about 1 tablespoon but this will vary based on how salty the brand of chicken broth used is, how salty the rotisserie chicken is, and personal preference. Make any necessary seasoning adjustments (i.e. more salt, pepper, herbs, etc.), remove the bay leaves, and serve immediately.

Soup will keep airtight in the fridge for 5 to 7 days or in the freezer for up to 6 months.

    It’s was okay but the noodles were kinda bland and the broth was too peppery. Do a dash of pepper and add  4 chicken bullion, and  an additional 16oz broth

    This is my go-to “miracle” soup when anyone is sick. The only thing I added was a bit of ginger (very restorative) and a sprinkle of turmeric while cooking because it brightens the color of the soup, particularly when using stock instead of broth. Fabulous recipe.

    This is a great quick and yummy soup! My only issue was it was too much pasta and it soaked up all the broth. I ended up having to add almost 4 cartons! Next time ill cut it in half and cook it separately til its almost done then add it in.

      Yes, noodles especially egg noodles, can soak up a lot of broth. One tip like you mentioned to combat that is to boil the noodles separately, or halve the amount, or add extra broth, too.

    This is so good. I use the Reames frozen noodles and the soup tastes homemade. I always add a couple teaspoons of better than bouillon to the low sodium broth. So good with Rhodes rolls.

  50. I used a bag of frozen mirepoix, which cut down on prep time.

    I expected the soup to be less flavorful because I used 4 cups of water with my last 4 cups of frozen broth from a very popular online roasted butter chicken recipe. But it was amazing! I think the butter from the broth added flavorful fats to the soup. Highly recommend.

    I think this soup is excellent, loved it!
    I really enjoyed the seasoning but only used half the pepper and found that to be enough. I also only used 8 oz. of noodles. I had a couple containers of frozen bone broth that I had made from a couple of rotisserie chickens so I used those, also enough left over chicken. I added 4 cups of water and some Better Than Bullion to taste, it was wonderful. Had to use dry parsley since mine recently died and forgot to add the lemon.     I think this soup is excellent, loved it!
    I really enjoyed the seasoning but only used half the pepper and found that to be enough. I also only used 8 oz. of noodles. I had a couple containers of frozen bone broth that I had made from a couple of rotisserie chickens so I used those, also enough left over chicken. I added 4 cups of water and some Better Than Bullion to taste, it was wonderful. Had to use dry parsley since mine recently died and forgot to add the lemon. Can’t wait to taste it with fresh parsley and lemon but it was still amazing. Thank you for such a flavorful chicken noodle soup!

    I absolutely love this recipe. I do find it heavy on the noodles so I do extra veggies. Make sure you wait until the end to add the salt a little at a time so you don’t over do it. I love the lemon flavor so I add alot more than it calls for.

    I used 1/2 of the bag of egg noodles and it was the perfect amount of noodles/broth.

    1. I saute them first to soften them up a bit and give them a bit of caramelized flavor before moving on. Definitely worth it for me. Hope you love the soup!

    Now I know why they call homemade chicken noodle soup “Comfort Food”

    I’ve never made it before, and decided to try this recipe. Such a lovely soup, I made a slightly larger batch of this recipe, with a few minor deviations and it still came out glorious.

    I didn’t have thyme, or fresh parsley, I did however chop in some fresh celery leaves, to no bad effect. I used wide egg noodles and found that at times I was doing more chewing/tasting of the starchy noodle – I could probably do with standard egg noodles. But in the end, when it was soup time, I went through two large bowlfuls, without even realizing it, it was THAT GOOD!!!! Thank you, this will be my go-to for Homemade Chicken Noodle Soup from now on!

    1. Yes you can do all those subs. Just Google how to poach chicken and do that. Or poach them in the broth before adding the noodles.

    Yes, it was a Costco chicken I used.  I took the left over chicken on the bone, put it in a pot covered with water and simmered for an hour or so.  With a slotted large spoon removed the chicken plus all little pieces from the pot. Pulled all of the chicken from the bones and amazingly got two cups. Let the broth cool, put in fridge overnight and next day skimmed fat off. Followed all ingredients to a T.  Used spiral egg noodles and undercooked slightly  because warming the chicken would cook them more.   I was afraid 1 teaspoon of pepper might be too much; it wasn’t.  Great chicken noodle soup. Am freezing the rest.  Never too old to learn.  Thanks.

    My husband has to eat low sodium so I cook chicken breasts without adding salt, shred the chicken and store in quart bags in the freezer.  I used that in the soup and followed the recipe, omitting the salt (I did use low sodium stock I keep on hand) and my husband loved it.  It was very tasty even without the salt.  I did add a little more onion than the recipe called for so he wouldn’t miss the salt.  It was delicious.

    Once you add the noodles ,simmer for 10 minutes and add the chicken & parsley, SERVE ASAP!!!

    I made the mistake of adding the noodles and simmering for about 30 minutes (or so).

    The noodles DO absorb ALL the broth!!

    My husband said this should be canned and sold it was so good! It did turn out amazing! I changed a couple things including: I used 16oz of orzo, doubled the broth (might even add another 32oz to make it more soupy next time as it was thick and hearty with double the broth, used a whole rotisserie chicken shredded up into little bits, and used fine ground white pepper instead of black to give it a more mellow flavor. Perfecto! <3

  109. The recipe was very easy to make, and overall it was good. I think the recipe calls for too much pepper. I know it specified “to taste”. But the suggestion was 1tsp. I thought the pepper overpowered the soup. I’ll try again with 1/2 the pepper and see how that goes.

    1. Yes “to taste” means to your taste which is why I wrote that since salt and pepper are very personal. In any recipe, always start with a pinch, especially if you think you’re sensitive to that particular flavor, spice, etc. and work up.

      1. Had to give a follow up – overnight the orzo expanded to like 100 times (slight exaggeration) its original size so this became more of a pasta dish in the end haha. Going to try it again but with like 1/3 of the orzo :)

    I loved it. I boiled a chicken a few days ago and I had homemade broth (always better than from the store) and my shredded chicken I had in the freezer. I had thyme and parsley from the garden, and prefer marjoram to oregano so that’s the only substitution I made. You’re right about the lemon. I had a fresh one on hand! It really was excellent.       I have made this recipe many times before, and it freezes well and holds it’s flavor. The egg noddles do soften after freezing and re heating but not to a degree that it is unpalatable.

    A good chicken soup has eluded me years, but no more…this is the keeper. Suggest doubling the recipe if you have 4 or more people, recipe as-is makes about 9 servings. I reduced the black pepper measurement to 3/4 tsp and this was still a bit much even for the avid black pepper fans of the household. Recommend reducing black pepper further to 1/2 tsp and then add more if needed at the end. The egg noodles makes the soup heartier and holds the herbs better. For the gluten free crowd, break up GF spaghetti (or add rice) as a substitute. I used 4 skinless chicken thighs, cooked them in the soup pot while I was chopping up the celery, onion, garlic, parsley and de-stemming the thyme.

    Great recipe! Loved the flavor! As experience tells me, I cooked the noodles separately in broth. I did not drain. The noodles soaked it all up. If I would have added them to the soup, there wouldn’t be any broth left. I used bone broth. It was very good and easy, but also took longer than 30 minutes with washing and chopping.

      Regarding the noodles soaking up broth, yes, that’s why I do mention that at any time should you need to add more broth, do it. Some noodles aren’t as spongey and don’t soak up as much as others. I find it varies from brand to brand but glad you followed your intuition.

I just wanted to let you know that a few weeks ago I was out of noodles so I added a cup and a half of rice and it was amazing. The rice absorbed all of the liquid and all of the flavor.     This was the best and easiest recipe that I have tried in a long time! I had a house full of sick kids including myself and this was both nourishing and delish. I used a rotisserie chicken from the super market and was easily able to put this together in no time. My niece tried it and loved it – she suggested that I use a frozen noodle next time and I just might give that a try. This recipe saved the day.

      I have heard people storing it with the noodles separate from the rest but I have never done that. They do absorb broth as time passes but I think that’s more in the fridge than the freezer. I wouldnt worry too much about it if yours are already all together.

      I freeze things like this in individual-sized Gladware containers because otherwise it’s a pain when thawing. Or maybe if you have a “family sized” plastic container, that’s fine too, but I wouldn’t just freeze it in one huge container because later on it’s a royal pain. Don’t fill any containers too full. The liquid expands slightly in the freezer.

    This was very good! Didn’t have fresh thyme or a bay leaf, but did have the other spices. Made it more brothy by using some water and boullion. Used a rotisserie chicken and got it right when they put it out at 4:00pm so it hadn’t spent hours drying out and was very moist. Nothing can ruin chicken soup more than dried out chicken. I also took the additional step of cooking the noodles separately and adding them to the individual bowls, and then storing them separately too so they don’t get soggy from absorbing all the broth. Yummy!

    Honestly- best chicken noodle soup I’ve ever had! I used fresh oregano instead of dried, added 3c more broth and used frozen noodles instead of dried. You will not be disappointed and don’t skip the lemon juice!

    The recipe calls for 12oz egg noodles. I ended up with noodle soup!!!
    Loved the recipe otherwise. Phenomenal flavour, loved the lemon in it (especially since made it for flu recovery) and used the rotisserie chicken to make super fast.
    I will definitely share and make this again and again but will only use half the amount of noodles! LOL!!

    1. No I haven’t because it really doesn’t get any faster than 30 minutes or more convenient for me personally than doing it on the stove but of course you can always experiment to see if you can make it faster/easier for you in an instant/crock pot.

    I’m making this now. I only had frozen chicken to use, so I am slow cooking it to add at the end. I needed more broth to balance out the 1 lbs package of Amish egg noodles in it. My honey has a stomach bug and I believe it will knock out his bad symptoms! So grateful for this recipe!

    Love your turkey noodle soup. When looking for the calories it says over 900 calories for 1 serving size! I’m sure this must be an error. There are 6 servings, so I think this would he for all six? I put more broth in mine as it was more like stew than soup. Quick and tasty though!

    Best soup I’ve ever made! No matter who I make this for it easily becomes one of their favourites! I’m a college student so to save money I normally substitute the fresh herbs with dried(you only measure 1/3 of the given fresh herb measurement when converting to dried). Theres so much flavour that even when I’m out of a few ingredients it’s still better then any other soup!

    I have made this soup many times. Simple and delicious. I do add some “Better than Boullion” for additional flavor. My husband also likes frozen Reames Homestyle Egg Noodles. I keep them separate from the soup so the noodles don’t get soggy.

    I made this today. I added some bouillon to add more flavor. Personal preference. I did not add any additional salt. I also will be adding more broth as the noodles do soak up the liquid. I cook chicken breasts in the instant pot and then shred and added to the soup.

    When making chicken noodle soup…cook noodles separately and keep separate…just add some to each individual bowl being served and then cover with the chicken soup..fresher tasting and noodles do not absorb the liquid. Particularly useful when soup is to be used some time later, even after freezing…just heat soup with noodles and enjoy!

    I’ve made this recipe twice & it doesn’t disappoint the second time around I made some changes to the recipe. Instead of cooking the noodles with the broth I cooked them separately due to the high temperature the broth boils out.

    This was a great soup. I wasn’t feeling well so I bought the carrots and celery already cut up. I did cut up the onion. I used lemon pepper rotisserie chicken since that was the only flavor the grocery store had. The soup turned out great and it wasn’t hard to make. It felt great on my throat and I felt better. This recipe is a keeper. I was looking for a soup that was quick to make . I don’t like canned soup because of the sodium. I made this with unsalted bone broth and unsalted chicken broth. I just added the salt that’s in the recipe and it was delicious.

    I made this soup with low sodium bone broth. It was delicious. The seasonings make it stand out. It does get thick after storing, so fewer noodles would fix that without altering flavor.
