It’s springtime, strawberry season is upon us, and the weather is sunny and gorgeous in San Diego.

I had a great run this morning outside and came in and took a look at the frozen strawberries in the freezer and knew I had to use them.

I wanted something blended and sweet and creamy to quench my thirst.

This did the trick.

It’s not a revolutionary “recipe”, but it sure is good.

It only takes a minute to make, and even less to drink. A blessing and a curse.

The only thing that would have made this better would have been adding a shot of rum or Malibu.

But it was 10am so I refrained.

I made a double batch, poured it into a bowl, put it in the freezer and later on tonight when I am watching Million Dollar Listing or a DVR’ed episode of The Real Housewives or Bethenny (yes, I love Bravo), I can shovel it into my mouth with a spoon as a strawberries ‘n cream “ice cream”

Hopefully I eat it slower with a spoon than I drank it with my straw because this was gone in a flash.

Strawberries and Cream Smoothie

This sweet and creamy smoothie is like a strawberry milkshake, but healthier. If you use fresh berries rather than frozen, the smoothie will not be very cold unless you add ice, which will water it down. Use frozen berries if possible, or toss fresh berries into the freezer for even an hour before making this for better results. Optionally, Make make as an “ice cream” or frozen treat. Pour blended mixture into a bowl, freeze until almost solid, and serve. Or make popsicles – use paper dixie cups or ice cube trays and toothpicks or wooden grill skewers as the stick if you don’t have popsicle molds. Add rum (and a squirt of lime juice if you have it) for strawberry daiquiris, or Malibu, Citron, Gran Marnier. Add protein powder, drizzle with chocolate sauce, add other fruit (bananas, oranges, mango, pineapple, peaches, etc.) to the mixture before blending.

Ingredients  

  • 1 to 1 ½ cups frozen strawberries, big handful, fresh may be used although ice may be necessary
  • ¼ cup milk or cream, use your favorite milk or vegan milk, i.e. coconut milk cream, soy cream, etc.
  • sweetenter, to taste (sugar, stevia, agave, etc.)

Instructions 

  • Put all ingredients in a blender and blend until smooth and creamy. Depending on how many strawberries you used, their size, your blender, and your desired smoothie thickness and consistency, you may need more than 1/4 cup cream (I used about 1/2 cup), or add a splash of water, to reach desired consistency.
  • Serve immediately. Leftover portion may be stored in the freezer for later consumption for up to 2 months. The smoothie does not change consistency and taste is not effected upon thawing.

    I used to buy strawberries year round because I love them so much, but I don’t even bother with them in the winter anymore. Just totally not at all worth it.

  9. i was craving a smoothie all day! too bad i didn’t make one since I don’t have any fresh/frozen berries right now. i LOVE strawberries. especially strawberry banana flavored anything! mmm now i want a starberr banana smoothie haha! i think my favorite strawberry “recipe” is just plain ole chocolate covered strawberries. can’t go wrong!!

  12. I’ve slowly been getting into smoothies lately. They were not my thing at all since I’d rather chew on things than drink something… buttt with this hot weather lately I’ve been craving fruit like none other. I picked up a ton of frozen fruit today and made a decent one for a snack but I’m not all that good at making them. Gotta keep trying different combos. Was it a pretty heavy smoothie to drink with all that cream in it?
