How was Monday and getting back to the grind after a long holiday weekend?  I love long weekends; more time to spend with my family, more time to unwind, and just more timeSeems there’s never enough hours in the day, right?!  My Monday was super busy, but really productive.  Took yoga, taught yoga, networked with some other yoga teachers I’ve just recently met.  Did some housework, blog work, itunes playlists organizing kind of work, and of course took care of my little pumpkin, Skylar, and can proudly say I’ve only sung the abc’s 23 times today, down from my usual 57.

Thank you for the amazing compliments and yummy reviews on my Vegan Creme de Menthe Bars that are No-Bake, Gluten & Soy Free.  The recipe is really easy and takes 20 minutes, tops.  If creme de menthe isn’t your thing, peppermint extract works really well, too.  I am sincerely blown away by how many of you wrote in to tell me how awesome they looked and also for the high praise you give me as a vegan, and largely raw, chefI am humbled, thank you!!!!

But let’s talk about the past day of eats & treats around here…
I tore into a Pro Bar Koka Moka flavor

By no means a “light” bar considering it’s not really that large, but it the ingredients list doesn’t make me squirm, which is nice.

Guess who loves these?  Skylar does.  Yes, apparently she’s a chip off the ole block and she enjoys this chocolate and coffee-flavored bar.  Hmmm, wonder who she takes after with the choc & coffee?

Looks to me like a real chunk of dried papaya.  Sooo good.

I also tore into a bag of my TJ’s Mango Chunks.  I love mango.  And I love frozen fruit.  Match made in chilly fruity heaven.

I also tore into my mail and found a couple surprises.  First, I won Michelle of LuckyTasteBuds’ Give Away.  Thank you again, Michelle, for hooking up the Give Away me.  And I love my Dr. Flacker’s Crackers.

Why wouldn’t I love them?  They’re right up my alley: GF, Raw, High in Protein & Fiber.  Love it!  Thanks Dr. Flacker’s & Michelle!

I also got this lovely yoga mat from Aurorae Yoga

And there was this awesome color chart that breaks down some key points of each color.  For instance the Mat I received in green represents: Soothing, Renewal, Intellect, Nature, Self Control, Gentle & Harmonious

And here’s a Photo from their Site.  Their aerial photograhy is better than mine.  My pics keep chopping off part of the mat.  I’m a yogi, not a photographer, what can I say.  What I can say is that I love that the mat has this focal point that helps center your focus and steadies the mind.  It’s a lovely drishti, or gazing point.  And the mat’s thickness is just perfect.  At a 1/4 inch it’s not too thin & flimsy nor is it too thick and heavy to tote around.  Two Thumbs Up on the Aurorae Yoga Mat Here’s their Amazon Link, too.

So Moving Along…
Remember when I was all excited that I received some Amazing Grass Products?

And I decided to whip up a batch of my Raw Vegan Chocolate Coconut Snowballs with Chocolate Green Super Food

…But rather than using 3/4 c cocoa powder, I simply used a heaping 1/2 c cocoa powder AND 1 serving of Chocolate Amazing Grass PowderResult?  Tastes just as delish, but with a little extra antioxidant boost and the alkalizing power of green superfoods, tucked away in your chocolate dessert.  Basically, good stuff for you in the raw vegan chocolate coconut dessert action.  Just call me sneaky chef.

Fresh greenery over the past few days has included a leftover turkey, garden veggie, and green salad with ranch dressing for Scott.

And for me, what else, but some Kale.  I think Gena, VeggieGirl, and I are joined at the hip in that regard because we each seem to eat kale nearly daily.  Love my kale I tell ya!  I dressed this kale, cauli, cuke, and tomato salad with my Homemade Vegan Slaw Dressing.

The dressing is sweet & tangy, and with the crunch of the veggies, lately I can’t get enough of this combo.  As I am sure you can tell from the similarity of the photos.

For Dessert, what else, but a Vegan Creme de Menthe Bar.   Thin Mints meet Buttercream Frosting meet Chocolate Layery GoodnessAnd Gluten & Soy Free.

Yoga Today is the Standing Splits (Urdhva Prasarita Eka Padasana)

Tip of the Days:  Holiday Season Eating Strategies include:  
Don’t starve yourself before an event in an effort to “save your calories” for a big party and walk in ravenous and then eat a tray’s worth of greasy appetizers that you wouldn’t have otherwise chosen.
Limit the sugary and calorically dense drinks & spirits, both alcoholic and non-alcoholicEggnog and peppermint lattes come to mind.   

Stay on track with your exercise program.   Don’t cheat or get sloppy with your dietary choices AND your exercise program and expect to stay on track.   

BUT….Be gentle and kind to yourself if you do fall off track.  Just get back up and on track as soon as possible and don’t sweat it!!!!!

And really, just enjoy the holiday season and remember to hug your friends and family because it’s about good times with your loved ones this time of year above all else!!!

What do you do if you go to a party or a restaurant and everyone else is raving about the food but for whatever reason, it’s not your cup of tea?  Either it’s totally unhealthy, it’s not vegetarian/vegan and you are, you’re allergic/intolerant to it, or it’s just plain gross but everyone else seems to be fine with it.  What do you do?  Fake a few bites?  Just say no thank you?  Tell the hostess honestly you didn’t like it? (yeah, right)  But what do you do when you don’t like the food that is being served when you’re out?
