Recipe Ingredients

As promised, these s’mores Golden Grahams bars require just four ingredients:

  • Unsalted butter
  • Mini marshmallows: If you only have regular-sized marshmallows on hand, I recommend roughly chopping them before adding them to the saucepan. This way, they melt quicker
  • Golden Grahams cereal: Thereโ€™s really no good substitute for Golden Grahams cereal. The best you can do is scan the cereal aisle of your local grocery store for a store-brand version of Golden Grahams. Otherwise, youโ€™re out of luck if you canโ€™t find any. Do NOT substitute graham crackers
  • Semi-sweet chocolate chips (you may melt a chocolate bar instead, if needed)

A note on box size: Due to recent package size reductions, the standard 11.7-ounce box of Golden Grahams now only contains about 8 cups of cereal. This recipe uses a full box, so you should be fine, but if your box seems light, pick up the larger family-size box to make sure you have enough.

Optional Add-Ins:

  • 1 teaspoon pure vanilla extract: Adds a subtle warmth and depth. It’s not necessary, but if you love vanilla, go ahead and stir it in after the marshmallows melt.
  • Hershey’s bar pieces: Break a Hershey’s bar into individual squares and press them into the top of the bars before cooling for a more classic, campfire-style look.

How to Make Golden Grahams S’mores Bars

Making no-bake s’mores cereal bars is quick and easy. The hardest part is waiting for the cereal mixture to cool enough to slice!

Here’s an overview of how the s’mores bars are made:

  1. Melt butter and marshmallows over medium heat until smooth.
  2. Stir in the cereal, then turn the mixture into a foil-lined 9×13-inch baking dish.
  3. Optionally sprinkle with extra mini marshmallows.
  4. Drizzle with melted chocolate.
  5. Set aside to cool for about 30 minutes, or until the bars are room temperature. For clean cuts, use a sharp knife and wipe it clean with a damp cloth between each cut. This prevents the sticky marshmallow from dragging and tearing the bars, so every slice looks neat and presentable.

A Note About the Topping

I sprinkled an additional half-cup of marshmallows on the top for both visual appeal and taste, but that does require two bags of marshmallows. Therefore, the extra marshmallows sprinkled on top are optional if you don’t want to buy a second bag of marshmallows. I realize not everyone has bags of half-eaten marshmallows lying around as I do.

Also, feel free to get heavier-handed with the chocolate. For the photos, I did more of a drizzle so you could better see what’s underneath, but you can get carried away and do a thicker drizzle/layer by doubling the amount of chocolate chips that you melt. I mean, why not?

Possible Variations

These bars are flexible and easy to customize with different mix-ins and toppings.

  • Hershey’s bar topping: Instead of a chocolate drizzle, press individual squares from a broken Hershey’s bar into the top of the warm bars. It’s more rustic and looks exactly like a classic campfire s’more.
  • Peanut butter chips: Swap some or all of the chocolate chips for peanut butter chips for a PB s’mores twist.
  • White chocolate: Sub white chocolate chips for a sweeter, creamier bar.
  • Mix-ins: M&M’s, mini pretzels, and chopped Reese’s cups all work well stirred in with the cereal.
  • Soft vs. crunchy: Melt the marshmallows over low heat for soft, gooey bars. Crank the heat a bit higher if you prefer a slightly crunchier set.
  • Cereal swaps: Golden Grahams gives the most authentic s’mores flavor, but Cinnamon Toast Crunch, Honey Grahams, or a store-brand graham cereal all work in a pinch.

Can this recipe be halved?

Sure thing! I prefer making the full batch because it uses up one full box of Golden Grahams plus one bag of marshmallows, and I hate having half-opened bags of ingredients lining around. But you’re welcome to halve the ingredients and use a 9×9 or 8×8-inch baking dish instead.

  1. I’m with Paula! Not a fan of campfires or fire pits in general! Is there a cereal you recommend if one doesn’t like Golden Grahams? (Usually I make s’mores with Nilla Wafers.) I’ve been having marshmallow cravings lately, so these look GOOD!!

  2. I love s’mores but don’t like the campfire smell that lingers on me after. The band I play in is performing at a campground tomorrow and I am thinking these would be the perfect (and appropriate) treat to take along. Hope you have a great holiday weekend!

    1. I think they would be an awesome treat! Good luck with your gig tomorrow and enjoy the long holiday weekend!
