I love watermelon but sometimes my eyes are bigger than my stomach.

I recently bought a huge watermelon, but I didn’t realize exactly how huge until I was cleaning it.

It just kept going, and going, and going. It was multiplying on the cutting board, I swear.

But I wasn’t worried about what to do with it all because I can eat my weight in it, and I knew I’d freeze extra for slushies.

As a nice bonus, if you’re using frozen fruit in smoothies and slushies you don’t need to add ice which just waters them down.

The slushies can be made with our without alcohol, but it’s a holiday so I say go for it. Even if it’s not a holiday, I say go for it.

The lemon adds a bright tartness to the sweet watermelon and the slushies are incredibly refreshing. They go down fast, easy, and you’ll want a refill before you know it.

Sadly, I know this was probably the last watermelon of the season.

But it just made the slushies taste extra special.

Watermelon Lemon Drop Slushies

If you’ve ever bought too much watermelon, freeze extra for slushies. The slushies can be made with or without alcohol. Freeze the watermelon for 1 hour before blending it so you don’t need to add ice which would water down the slushies. The lemon adds a bright tartness to the sweet watermelon and the slushies are incredibly refreshing and go down fast and easy.

Additional Time: 58 minutes
Total Time: 1 hour
Servings: 2 drinks, 6 to 8 ounces each

Instructions 

  • To the canister of a blender or food processor, add all ingredients and blend on high speed until smooth, about 1 minute.
  • Divide mixture between two glasses and serve immediately. Extra slushie mixture can be kept in the freezer for up to 1 month by placing freezer-safe glasses inside a large ziplock bag to avoid freezer smells; allow to thaw for about 45 minutes before stirring and serving. If adding alcohol, recipe is intended for those for whom alcohol use is legal and appropriate. Always drink responsibly.

Haha I am familiar with the NEVER-ENDING WATERMELON phenomenon – I convinced my fiance that we NEEDED to buy the whole watermelon because it’s on sale… we were so sick of watermelon by the end of the week. I had no idea you can freeze watermelon and use it for delicious slushy drinks even when it’s not in season, what a great idea!

    1. Almost anything can be frozen. From bread you’re not going to go through, to watermelon, to cookie dough. My freezer contains it all! The NEVER-ENDING WATERMELON phenomenon, yeah, I was there when I bought this one. Nuts, it just kept going…..

    I still have room in my freezer. I’m buying a watermelon TODAY and freezing it in chunks. That is, if I can carry it for miles in my backpack. :D

    This slushie would be great to freeze and drink in the winter. Because, you know, I always crave slushies in the freezing cold.

    1. I can drink hot hot hot coffee in the dead of summer and drink freezing iced coffee in the winter – I swear I must like to suffer, i.e. sweat or shiver!

      I was in Aruba and the watermelon seemed ‘normal’ size to me. A little on the big side but not crazy big, but it was already super ripe when I cut into it and so freezing half of it was a must!
