Recipe Ingredients

To make the grilled chicken and the cilantro lime marinade, youโ€™ll need:

  • Boneless skinless chicken breasts – You can substitute boneless skinless chicken thighs if preferred. Just adjust the cooking time as needed
  • Lime juice and zest
  • Olive oil
  • Honey
  • Fresh cilantro
  • Kosher salt and pepper

How to Grill Lime Cilantro Chicken

  1. Add the cilantro lime chicken marinade ingredients to a large zip-top bag. P
  2. Place the chicken inside, and marinate in the fridge for at least an hour.
  3. Once the chicken has marinated, preheat the grill to medium-high heat.ย 
  4. Grill the cilantro lime chicken until cooked through, making sure to flip it halfway through.
  5. Garnish with lime wedges and additional cilantro before serving.ย

Tip for Shortening the Grill Time

As a shortcut, I used thin-sliced boneless skinless chicken breasts to make this cilantro lime grilled chicken. Their thinner size makes for faster grilling times and much more even cooking.

This recipe would be even faster with chicken breast tenders (sometimes called breast cutlets or medallions), but as it is with the thin-sliced breasts I only needed to grill them 5 minutes per side and they were done.

Many times with large chicken breasts on theย grill, I struggle to keep the outside from becoming overly dark before the interior is fully cooked through but with either thin-sliced or breast tenders, you donโ€™t have to worry about that.

I like to marinate my chicken overnight for the full and tenderizing effects, but if youโ€™re running short on time, even 30 to 60 minutes will do.

I used thin-sliced boneless skinless chicken breasts to make this cilantro lime grilled chicken. This type of chicken breasts needs roughlyย 10 minutesย total to cook through.ย

Storage:

This recipe is best fresh but will keep airtight in the fridge for up to 5 days or in the freezer for up to 4 months. Thaw in the fridge overnight, and serve cold. Or, warm the chicken in the microwave or a skillet over medium heat.

Grilled Lime Cilantro Chicken

Ingredients 

  • 1 ยฝ pounds thin-sliced boneless skinless chicken breasts, I had 4 breasts
  • 1 to 2 teaspoons lime zest
  • ยฝ cup lime juice
  • ยผ cup olive oil
  • ยผ cup honey
  • ยผ cup fresh cilantro, plus more for garnishing
  • 1 to 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • lime wedges, optional for garnishing

Instructions 

  • To a large ziptop plastic bag, add all ingredients, seal, and smoosh around to evenly coat chicken. Place bag in fridge for at least 1 hour, or overnight, to marinate.
  • Lightly oil grill grates and preheat grill to medium-high heat.
  • Add the chicken, discard the bag with the marinade, and grill for about 5 minutes on the first side with lid closed, flip, and cook for about 4 to 5 minutes on the second side with lid closed, or until chicken is cooked through and as done as desired.
  • Garnish chicken with additional cilantro, optional lime wedges, and serve immediately.

    I have made this twice both times were excellent. Added some cayenne peeper and chili powder the second time to give it a liitle kick. The chicken is very moist and flavorful

    Great taste! Used fresh lime juice, added 1 tsp cumin and 1/2 tsp chipotle chili powder. I also used slightly pounded thighs as we like the flavor and the way they hold juiciness.

    My wife loved it so it is definitely a keeper! I decided to make this at the last minute so I wasn’t able to marinate the chicken as long as recommended but it still turned out to be very tasty. I used chicken tenders so I cut back on the recommended cooking time.

    I strained the marinade and then boiled it to make a lttle sauce to pour over the chicken and jasmine rice.
