Easy Mexican High Protein High Fiber Dinner Recipes

  • Why Mexican recipes? Because they naturally feature veggies like onions, tomatoes, corn, zucchini, green onions, and more which are easy, low-lift ways to boost fiber for high fiber high protein recipes with crunch and texture.
  • Does everything have beans in it? Nope! I know a lot of people are bean fans so they’re not in everything. But in most cases, you can easily add a half-can to a can of black beans or garbanzo beans for more fiber AND protein.
  • Can I swap ground beef for ground chicken or vice versa? In most cases when a ground protein is called for you can substitute. Stick with extra lean ground beef in the 93-95% so that it mimics chicken’s fat content which is usually in that same range.
  • What are the protein and fiber stats? Each recipe has different stats and you can consult the bottom of the recipe card where you’ll find that info. There’s a minimum of 30 grams protein and a minimum of 5 grams fiber per serving.
