After I came home from our Aruba trip, I had to make something with my Vita-Mix.  I just had to turn on the beast.

It had been 3 whole weeks and my hearing had normalized so any sane woman would turn her Vita on at 2am after being awake for 24+ hours if she was apart from her beloved appliance for 3 weeks, right?

I looked around the kitchen and my vat of coconut flakes and coconut oil were calling out to be used.

If you like cookie dough, infused with the flavors of coconut, these are for you.  The coconut flavor is present, but not overpowering, and I love the combo of coconut + cookie dough + chocolate.

And if you “don’t like coconut”, well, try it again. You’ll come around. I sure have over the years.

For the non-cocnut fans, you make these non-coconutty raw vegan chocolate chip cookie dough balls instead.

And for the coconut lovers, enjoy the recipe.

No Bake Coconut & Chocolate Chip Cookie Dough Bites

Ingredients:

2/3 c cashews (unsalted, and raw if possible)

1/4 c coconut flakes (unsweetened or sweetened)

2 tbsp oats (whole, rolled not quick cook)

3 tbsp agave or maple syrup (or combination)

1 tsp vanilla extract

1 tsp coconut oil (optional, and if using it and batter gets too wet after adding, add a pinch more dried coconut flakes, oats, or cashews and re-blend)

 

1/4 to 1/3 c chocolate chips or chunks

Yields: approximately 16-18 bites

Directions:

First add cashews, coconut flakes, and oats to Vita-Mix or food processor and grind into a fine powder.  Then, add the agave, vanilla extract, and coconut oil, and blend again.  Finally, the chocolate chips and either stir in by hand or barely blend/pulse until incorporated.  Retain some texture to the chips or chunks.

Remove the dough and form into cookie bites.  If dough is soft or hard to work with, refrigerate/freeze for 20 minutes prior to forming into bites.

Optional Ideas:

After the bites are formed, drizzle them with dark or white chocolate by melting 1/4 c dark/white chocolate.  With a spoon, drizzle chocolate over the top of the bites (see here for an example) Or, dip each bite entirely into chocolate.

Add dried coconut flakes to each bite by rolling them in coconut flakes at the end.

Dust finished bites with cocoa or carob powder.

Store the dough bites in refrigerator or freezer.

Or eat them as dessert.

Or really just any time the Cookie Dough Monster comes calling.  Which, for me, is quite frequently.

Coconut & Chocolate Chip Cookie Dough Bites on green plate I store all my bites and balls in the freezer so that I have a wide variety and assortment of different flavors on hand, at all times.  Freezing has no effect on the taste, IMO.  Major blessing. My grandma used to keep about 17 different types of cookies in her deep freeze in Folger’s Coffee cans and I suppose raw vegan cookie dough bites in the freezer is really just a new variation on her very old theme.

I can just pop of few of whatever flavors I want rather than having to make from scratch at a moment’s notice and you know how it is when you get that sudden craving!

Now I can add coconut flavored dough to my recipe arsenal.  An to the freezer.  That makes me happy.

As well as enjoying the sunny, albeit cool-ish, weather.

2. Do you like coconut flavored things?

I never used to like coconut but as time has gone on I like it more and more.

Now, I can’t really “taste” coconut oil in recipes the way I used to be able to about five years ago.

In fact, I have come to adore coconut oil in desserts.  Or for roasting veggies.

But raw vegan coconut oil chocolate is a favorite of mine.

  1. Holy moly, I guess that’s a vat of coconut flakes! haha. I’m so bummed I just used the last of my coconut last night or else these would be considered made. I LOVE coconut. Always have. And these bits look just perfect.
    I’m also big on freezing stuff. Freeze all my muffins that I make. Why leave them out and have week-old tasting muffins after a week when I can pop them in the freezer and have fresh-tasting muffins a week later?! The cookies, not so much. Unless I’m trying to keep them for myself and not share with the rest of the family :P If I put stuff in the freezer no one touches it!

    i do like coconut flavour. i think my favourite is coconut pattie chocolates. they date back to the 70s in florida…quite unbeatable.
    i have two types of choco chip cookie in my freezer, currently. a household staple!

  4. Yumsiii! I love all your dough balls, they look delicious! And i like that you use a little oat in them, oat makes everything good!
    I love coconut! I use coconut oil all the time! And i love milk/cream in soups. And coconut butter is a new favorit that I just cant get enough of!
    The best thing I ate this weekend was the chocolate mousse I made yesterday. I ate a big bowl, and enjoyed every single spoon of it! mmhm

    1. It gives it the “floury” taste of real cookie dough but still isnt like eating raw wheat flour; plus oat flour can be or is GF.

  5. Haha I love how your vita = the beast. A vita mix is going to be my next big purchase! My magic bullet died on me recently and I am literally tearing up that I cannot make these balls of deliciousness. Oh also my grandma freezes cookies too and that way she’s always prepared when company stops by! So cute :)

  6. I do love anything coconut. Always have, always will! :D You know what’s weird?! this may just be MY observation–but it seems like almost NO males like coconut! haha strange….these look delicious Averie! And the photos are lovely.

  8. The best thing I did this weekend was watch my Dad cook steak at a local celebration at my gym. It was a steak and lobster night! I had an amazing time, but I had to turn in early. I have another shift tomorrow!

  9. I absolutely adore all things coconut! I made Mama Pea’s coconut chai a few days ago, and seriously fell in love :)

    I’m going to have to learn to make these dough balls asap, I’m thinking that keeping a few different flavors in the freezer is a pretty fabulous idea…

    as far as new flavors… what about black forest, salted caramel, or mexican hot chocolate? Ginger snap? espresso? the possibilities are endless…

  10. Just bookmarked this and making them ASAP! It’s funny.. I just bookmarked your non-coconut version of these.. but I think these are more up my alley. I adore coconut.

    1. Hmm.. I had my favorite thing on the menu at one of my favorite places to eat in Richmond–the famed vegan caeser salad. I asked them if they could give me the recipe since I’m moving. Alas, they didn’t, but they did have someone come out of the kitchen to give me some tips on how they prep the tofu for it. I also went to First Fridays yesterday, which is a monthly artwalk. Lots of people, art, and a really great energy. Today I met up with a friend that I hadn’t seen in awhile–to shop and say our “see you laters” since I’m moving away :)

    3. I bet a chai-spiced cookie dough would be awesome! I made these chai-spiced shortbread cookies once and they were incredible! Or how about a white chocolate chip macadamia cookie dough? Or a biscotti inspired one? That’d be yummy :) Whatever you make is yummy though!

    p.s. I have a feeling that you and Skylar will have a bond that will last for eternity. There may be some bumps in the road as she gets older, who knows really, but in the end she will always love you. I dunno.. I just see the two of you growing closer and closer as time goes by, and you both already have such a strong connection. Your adoration of her is so beautiful, and I love that you just let her be her wonderful self :)

  11. Lovee coconut!! Those No Bake Coconut & Chocolate Chip Cookie Dough Bites sound fab! I love pretty much all cookies. :) Lately I’ve been in a peanut butter cookie mood. There’s a bakery I go to that makes peanut butter oatmeal cookies that are amazing especially when they’re warm.

  13. I love coconut! I don’t REALLY like the texture of shredded coconut, but I can handle a bit… I grew up spending summers in Hawaii and my grandpa had a coconut tree in his back yard – we’d hammer them open and drink the coconut water – YUM!
