Easiest Cream Cheese Buffalo Chicken Dip

The smell of buffalo wing sauce reminds me of a fun college waitressing job I had. When it’s combined with two kinds of cheese, cream cheese, and chicken, we’re talking serious comfort food.

I can — and do! — make a meal out of dips, and the cheesier the better. This easy chicken wing dip is plenty cheesy, creamy, and there’s just enough kick from the wing sauce. I use medium heat because my family doesn’t like anything hotter, but go as hot or mild as you like.

It’s a fast buffalo cream cheese dip recipe that’ll be a guaranteed hit with everyone at your next event and is perfect for game day parties. You can assemble it up to two days in advance and keep it covered in the fridge before baking it off before your event.

I wanted to keep this recipe as simple yet flavorful as possible, so I opted to make the buffalo chicken dip without ranch. In my opinion, it’s just not necessary!

How to Make Buffalo Chicken Dip

Making spicy buffalo chicken dip with cream cheese is so quick and easy! Here are the basic recipe steps:

  1. Spray a 9-inch pie dish with cooking spray; set aside.
  2. To a large bowl, add the chicken, cream cheese, wing sauce, 1 cup cheese, and stir to combine.
  3. Turn mixture out into prepared dish, smoothing the top lightly with a spatula. Top with remaining cheese.
  4. Bake at 350ºF until the top is lightly golden brown and bubbly.

What’s the best chicken for buffalo chicken dip?

You can use any kind of cooked chicken for this recipe, but I recommend using chicken that isn’t heavily seasoned or coated in a marinade. You can purchase a rotisserie chicken at the grocery store and pick the bones clean, or you can purchase chicken breasts and either poach or bake them yourself.

Can this recipe be doubled?

Absolutely! Double the ingredients and bake in an 8-inch square baking dish.

What goes well with buffalo chicken dip?

I recommend serving the chicken buffalo dip with tortilla chips, pita chips, celery sticks, carrots, pretzels or pretzel chips, potato chips, crackers, crusty bread, and / or a mixture of all of the above. A few carb-y items plus a few fresh ones are good!

Can buffalo chicken dip be made in advance?

Yes! Follow the recipe instructions as written up until the point where you’re supposed to bake it. Instead, cover the dish with plastic wrap and chill up to 2 days before baking as instructed.

How long is buffalo chicken dip is good for?

Homemade buffalo cream cheese chicken dip will last up to 4 days in the fridge, covered tightly with plastic wrap.

Ingredients  

  • 2 cups chopped chicken, cooked*
  • 8 ounces brick-style cream cheese, very well-softened (lite okay)
  • 8 ounces buffalo wing sauce, I use medium heat
  • 2 cups finely grated cheddar and monterey Jack cheese blend, or similar, divided

Instructions 

  • Preheat oven to 350F and spray a 9-inch pie dish with cooking spray; set aside.
  • To a large bowl, add the chicken, cream cheese, wing sauce, 1 cup cheese, and stir to combine.
  • Turn mixture out into prepared dish, smoothing the top lightly with a spatula.
  • Top with remaining 1 cup cheese. Tip – For a make-ahead option, at this point cover with plasticwrap and refrigerate for up to 2 days before baking. Remove plasticwrap before baking.
  • Bake for about 30 to 35 minutes (start watching at 25 minutes because all ovens, cheese, etc. varies), or until lightly golden browned and bubbly. Serve immediately with chips, crackers, bread, or your favorite dippers.

Notes

*When I want to keep this vegetarian, I used thawed Beyond Meat Grilled Strips.
Storage – Dip is best warm and fresh but extra will keep in an airtight container in the fridge for up to 5 days. Reheat gently before serving.

    I can’t believe I haven’t commented on this yet — this recipe is absolutely fantastic. I’ve made this for numerous pot lucks so far and it is always a hit. I bring the extras in to work and everyone I work with just adores it. SOOO easy to make, too. I especially love that I can refrigerate the recipe before cooking it, wake up a tiny bit early and pop it in the oven while I get ready for work. This is a go-to life saver for group dining events :)

    I’ve made the recipe as is and then instead of just serving it as a dip, I cook a pound of ziti and with a touch of the starchy cooking liquid, I add the dip mix to it. Just add a little more cheddar cheeses and it turns an appetizer into a meal! My family loves it served with a crusty baguette.

  9. My co-workers would love this for an office carry in! I’ve tried the beef crumbles and thought they had great texture and flavor but haven’t tried the chicken yet. I can only find Beyond Meat products at 1 specialty health food store here on the opposite side of town. I wish my regular grocer carried it.
