Summer is in full swing and I know you’re in need of some hydration. I’ve got just the thing to quench your thirst with this tropical tasting drink.
It’s fast, easy, refreshing, made with only 3 ingredients – strawberries, pineapple, Silk Coconut Milk – and it’s definitely delicious.

And you want to choose recipes that are able to be kept at room temp for hours while the party is underway.
Some of my favorites because you can make them ahead and they hold wonderfully include Blueberry Corn Salsa, Skinny Mexican Bean and Corn Salad, Lemon, Sun-Dried Tomato, and Almond Quinoa Salad, Avocado, Black Bean and Corn Salad with Lime-Cumin Vinaigrette, and Tomato, Mozzarella, and Basil Quinoa Salad.

Strawberry Coconut Pina Colada Smooothie
Fast, easy, refreshing, made with only 3 ingredients – strawberries, pineapple, Silk Coconut Milk – and it’s definitely delicious and tropical tasting.
Ingredients:
- 1 cup strawberries
- 1 cup pineapple chunks
- 3/4 cup Silk Coconut Milk (I used Unsweetened) or as necessary, (you may need milk less if fruit is room temp and more if it’s frozen solid)
- ice, if necessary to taste (if using frozen fruit, you likely will not need to add ice)
- optionally add agave or sugar to taste if your fruit is on the tart side
Directions:
- Add all ingredients to the canister of a blender. Blend on high power until smooth. Add additional Coconut Milk if necessary to achieve a smooth consistency. Serve immediately.

I don’t typically care for coconut milk, but I might make an exception for this recipe! Mmmm!
It’s not a strong coconut milk flavor like you would think of with coconut milk in a can. Much more subtle and doesn’t overpower things.
